“What’s available today?” is always the question the morning of a seafood class, This means that the menu is determined by what was recently caught based on the season and sea conditions. Whether it is Mahi Mahi, snapper, tuna or grouper, a delicious lunch using a local fish will be the end result.
Be prepared for a menu that adjusts from the one listed above based on what’s fresh and off the boats. But also be prepared to have fun as we adapt, create, and enjoy what we prepare and eat!

Frequent hand washing is required while working with food so be prepared to get your hands wet a few times. In the case of masks, since things are still a little blurry with COVID, we will ask you to wear a mask if you have flu like symptoms. We do this to ensure the safety of all of our participants.
I booked my Dad & his lady friend ‘both 80 years old next year’ into Nicole’s amazing cookery course yesterday.
They had the most fantastic time; the teaching, the quality, the environment, the food, the atmosphere, the views were all outstanding…..faultless & magical!
In fact they haven’t stopped talking about it and are sharing their experience with everyone they meet. Already passed Nicole’s details onto people by the pool at BOOM! When I collected them after the course I had the opportunity to try a little of what had been created by them and it was incredible! The quality of ingredients, presentation & taste literally scream at you. Cannot wait to book myself & my three teenage girls into this course at Xmas 2016. Nicole what a great find you are
My fiancee and I attended a cooking class with Nicole, Connie, and Adam in late April and had the best time! I was a bit worried that we weren’t going to get to do the cooking class (because I came down with a stomach bug at the beginning of our trip), but Nicole was able to reschedule for another day AND recommend a good doctor. She was also accommodating when it came to my many food allergies, which I really appreciated. We did the “From the sea” menu and loved all of the courses, though the plantain chips were probably our favorite dish! Anyway, a Nicole’s Table cooking class is a MUST while in Antigua!
In October 2014 we experienced our first cooking class with Nicole, so when we found we were going to be back in Antigua, there was not doubt, we were doing it again. We enjoyed our day and really didn’t want to leave. (Darn pesky taxi driver! insisting we had to leave to catch the boat…). As always the food was so much fun to prepare, (sorry to run you out of the kitchen Connie!!! But the blackened Maui Maui was amazing). We really missed seeing Adam this trip, we’ll have to do it again soon. The recipes are alway fun and so good. Plus just spending the day with Nicole and Connie you feel like you are family and at home.
